A rich, lightly spiced, Thai-style red curry made with free range pork shoulder, coconut milk, lemongrass, lime leaves and roasted pumpkin, seved with steamed brown rice and roti bread.

This is a dairy free meal. Remove the roti bread to enjoy a gluten free meal.

Serving Notes:

Add a little water to the curry and warm in a pot over a low heat, whilst stirring regularly, until heated through. Transfer the rice and roti bread to microwave safe dishes. Microwave the rice on high heat for 1 minute, stir and heat for a further 2 minutes until heated through. Once ready to serve, heat the roti bread in the microwave on high heat for 1 minute, until warm. Before heating, consider freezing to consume at a later date.
